Guinness Corned Beef

Yields: 16 servings

INGREDIENTS:

4 pounds corned beef brisket
1 cup brown sugar
1 (12 oz) can/bottle Irish stout beer
(e.g. Guinness)


DIRECTIONS:
Preheat oven to 300 degrees F. Rinse the beef completely and pat dry.  Place the brisket on rack in a roasting.  Rub the brown sugar on the corned beef to coat entire beef, including the bottom.  Pour the bottle of stout beer around, and gently over the beer to wet the sugar.  Cover, and place in preheated oven.  Bake for 2 1/2 hours.  Allow to sit 5 minutes before slicing.



Irish Bananas

Ready In: 15 Minutes
Yields:  4 servings

INGREDIENTS:

1/2 cup butter
1/2 cup packed light brown sugar
1/2 cup Irish whiskey
4 large bananas, peeled and halved lengthwise


DIRECTIONS:
Melt the butter in a skillet over medium heat.  Stir in the brown sugar and whiskey.  Bring to a boil and cook until sugar has dissolved.  Add the bananas to the skillet and simmer gently until bananas are tender and glazed with the syrup.  Serve immediately with vanilla ice cream.
