No Bake Chocolate Amaretto Cookies

 20 biscotti cookies (short cookies or 10 long cookies)
1/2 cup butter, softened
3 to 4 tablespoons amaretto liqueur
1/3 cup superfine sugar
1/3 cup cocoa powder

 

Crush cookies into crumbs using a food processor. Use a hand mixer and cream together butter, amaretto, and sugar, sift in cocoa powder. Add biscotti crumbs and mix well. Roll in parchment or waxed paper as you would a compound butter and make into a cylinder. Refrigerate overnight. Slice and serve cold.

 

 

 

No Bake Chocolate Peanut-Butter Cookies

 

2 cups sugar
4 tablespoons cocoa
1 stick butter
1/2 cup milk
1 cup peanut butter
1 tablespoon vanilla
3 cups oatmeal

4 tablespoons vanilla vodka

 

Get all of your ingredients together first and ready to go.  This will take about 10-15 minutes.

In a heavy saucepan bring to a boil, the sugar, cocoa, butter and milk. Let boil for 1 minute then add peanut butter.  Once the peanut butter has been added take off the heat,  Add your vanilla, vanilla vodka and oatmeal. Mix really well and let cool for a minute or so.  Then on a sheet of waxed paper, drop mixture by the teaspoonful, let cooled and hardened.
