Cream Sherry Balls    Created by Jon Payne


¼ cup butter

6 cups miniature marshmallows

6 cups crisp rice cereal

½ cup butterscotch chips

4 tbsps cream sherry


Drizzle:

11/2 cup confectioners’ sugar

½ cup cream sherry

 

Melt butter in a large sauce pan over low heat.  Add marshmallows add butter scotch and once its all melted and creamy add the cream sherry.  Add the crisp rice cereal.  Stir until well coated.

Using a buttered spatula, press mixture evenly and firmly in buttered 13x9 x2 inch pan.  Then turn over onto a piece of wax paper.  Using a melon baller, make balls out of the pan.

 

Make the drizzle:

11/2 cup confections sugar

½ cup cream sherry

Combine the two ingredients together using a whisk.  Drizzle over the balls.  If the drizzle is too thick add more cream sherry.  If it is too thin add more confectioners’ sugar.
