Consider these Wonderful Recipes during the Fall Apple Harvest!
Roast Chicken with Apples, Turnips & Garlic

Prep Time: 30 minutes
Cook Time: 1 Hr 15 Min
Servings: 4-6 people
INGREDIENTS:

1 tablespoon paprika

1/2 teaspoon freshly ground black pepper

1/2 teaspoon salt

1 - 3 lbs chicken

3 medium apples, cored, peeled and cut into eighths

3 small white turnips, peeled, quartered and thinly sliced

4 cloves of garlic, peeled

juice of half a lemon
DIRECTIONS:
Preheat oven to 350 degrees. Combine the paprika, pepper and salt and rub the chicken inside and out with the mixture.
Lightly oil or spray a roasting pan, add the chicken, breast side up and arrange the apples, turnips and garlic around the sides. Trickle the lemon juice over the apples and turnips. Roast the chicken until it is golden brown all over, about 1 hour and 15 minutes. Baste with pan juices two or three times during the roasting.
When the chicken is done, remove it to a serving platter and spoon the apples, turnips and garlic into a food processor. Skim the fat from the pan and pour the remaining juice over the vegetables. Process to a puree consistency and serve separately with the chicken. Apple Sorbet

Servings: 4-6 people
INGREDIENTS:

Combine all the ingredients in a medium-sized bowl, blender or food processor and blend. Chill 1 hour.
Pour into a shallow dish and place in th freezer for about 1 hour. Then, beat the mixture, cover with aluminum foil and freeze until firm. Makes 1 quart.
Hot Apple Cider
Prep Time: 145 minutes
Cook Time: 1/2 hour
Servings: 12
1/2 gallon apple cider
12 cloves
3 cinnamon sticks
1 cup orange juice
1/2 cup lemon
Heat apple cider. Add all ingredients. Allow the mixture to simmmer for half hour or more. Serve this in mugs on a chilly night. |
