Slow Cooker BBQ
Pulled-Pork Fajitas

Prep Time: 15 minutes
Cook Time: 10 hrs, 45 min
Servings: 18 people
INGREDIENTS:
- 1 pork boneless loin roast,(2 1/2 lbs) trimmed
- 1 med onion, sliced
- 2 cups barbecue sauce
- 3/4 cup salsa
- 1 teaspoon cumin
- 1 bag (1 lb) frozen stir-fry bell peppers & onions
- 1/2 tsp salt
- 18 flour tortillas (8-10 inches in diameter)
- Shredded cheese, if desired
- Guacamole, if desired
- Sour Cream, if desired
DIRECTIONS:

Place pork in 3 -4 quart slow cooker. Place onion on top.
Mix barbecue sauce, salsa, chili powder and cumin in small bowl; pour over pork and onion.
Cover and cook on Low heat setting 8 - 10 hours.
Remove pork from cooker;place on cutting board. Shred pork, using 2 forks. Return pork to cooker and mix well. Stir in stir-fry vegetables and salt. Increase heat setting to High. Cover and cook 30 minutes or until mixture is hot and vegetables are tender.
Using slotted spoon to remove pork mixture from cooker, fill each tortilla with 1/2 cup pork mixture. Fold one end of tortilla up about 1 inch over filling; fold right and left sides over folded end, overlapping. Fold remaining end down. Serve with cheese, guacamole and sour cream. |
Texas Coleslaw

Prep Time: 15 minutes
Cook Time: 1 hour 15 min
Servings: 16 people
INGREDIENTS:
- 1 bag (16oz) coleslaw mix
- 1/2 cup chopped fresh cilantro
- 2 cans (11 ozs each) Green Giant Mexicorn (whole kernel corn with red & green peppers, drained
- 1/4 cup vegetable oil
- 3 tablespoons lime or lemon juice
- 3/4 teaspoon ground cumin
- 1/2 teaspoon salt
DIRECTIONS:
Toss coleslaw mix, cilantro and corn in very large (4 qt) bowl. Place oil, lime juice, cumin and salt in tightly covered container; shake well. Pour over coleslaw mixture; toss. Cover and refrigerate 1 -2 hours to blend flavors.
Smoked Sausage Baked Beans

Prep Time: 10 min
Total Time: 1 hour 10 min
Servings: 24 people
INGREDIENTS:
- 2 cans (55 ozs each) baked beans
- 2 jalapeno chiles, seeded and finely chopped
- 1 ring (1 lb) fully cooked smoked sausage, cubed
- 1 tablespoon ground cumin
- 1 tablespoon chili powder
DIRECTIONS:
Heat oven to 350 degrees. In large bowl, mix all ingredients; spoon into ungreased 4 quart casserole. Bake uncovered 45-60 minutes or until thoroughly heated and bubbly.
