Sweet-Hot Plum-Glazed Ham

Prep Time: 15 minutes
Cook Time: 3 hrs, 23 min
Servings: 10 people
INGREDIENTS:
- 1 cup plum preserves
- 1/2 cup orange juice
- 2 Tbl lime juice
- 1 Tbl yellow mustard
- 1 Tbl honey
- 2 tsp minced fresh ginger
- 1/2 tsp dried crushed red pepper
- 1 (7-lb) smoked fully cooked, bone-in ham
- Garnishes: pineapple, kiwifruit, green onions, black sesame seeds

Stir together first 7 ingredients in a saucepan over medium-high heat; bring to a boil, stirring constantly. Reduce heat to medium-low; simmer, stirring constantly, 5 minutes or until preserves are melted and mixture is blended. Pour half of plum preserve mixture into a microwave-safe bowl.
Trim excess fat on ham to 1/8 inch thickness. If desired, make long, shallow cuts (about 1/16 in deep) over entire ham, forming diamond patterns. Place ham on a wire rack in an aluminum foil-lined roasting pan. Brush ham with a portion of plum preserve mixture in saucepan.
Bake ham, uncovered, at 350 degrees on lower oven rack 1 hour and 30 minutes, basting with remaining plum preserve mixture in saucepan every 30 min. Loosely cover with aluminum foil, and bake 1 hour and 45 minutes longer or until a meat thermometer inserted into the thickest portion registers 140 degrees, basting every 30 min. Let ham stand 15 minutes before slicing.
Microwave remaining plum preserve mixture in bowl on high for 1 minute or until thoroughly heated. Serve with ham. |
Classic Parmesan Scalloped Potatoes

Cook Time: 20 min
Bake: 30 min
Servings: 6 - 8 people
INGREDIENTS:
- 1/4 cup butter
- 2 lbs Yukon gold potatoes, peeled and thinly sliced
- 3 cups whipping cream
- 2 garlic cloves, chopped
- 1 1/2 tsp salt
- 1/4 tsp freshly ground pepper
- 1/4 cup fresh flat-leaf parsley, chopped
- 1/2 cup grated Parmesan Cheese

Melt butter in a large Dutch oven over medium-high heat. Stir in potatoes and next 5 ingredients, and bring to a boil. Reduce heat to medium-low, and cook, stirring gently, 15 minutes or until potatoes are tender.
Spoon mixture into a lightly greased 13 x 9 baking dish; sprinkle with cheese.
Bake at 400 degrees for 25 - 30 minutes or until bubbly and golden brown. Remove to a wire rack, and let stand 10 minutes before serving. |
