BBQ PORK SANDWICHES

"A combination of roasting, then barbecuing with sauce makes this pork a delicious southern style recipe. Takes some preparation but well worth it. Excellent for feeding a crowd!"

Cook time: 4 hours

Ready in:  4 hours & 15 minutes

INGREDIENTS:

6 pounds of pork butt
1 (18 oz) bottle hickory flavored BBQ sauce
8 hamburger buns
garlic salt

 DIRECTIONS:

  1. Preheat oven to 350 degrees. Place roast in a 9x13 inch pan, sprinkle with garlic salt, and cover with foil.
  2. Bake in preheated oven for 3 to 4 hours, or until a meat thermometer inserted reads 160 defrees F.  Preheat an outdoor grill for high heat and lightly oil grate.
  3. Grill roast for 10 minutes on each side.  Return roast to the pan, and shred the meat using two forks.  Stir in barbecue sauce, and return to the oven for 20 minutes, or until heated through. Spoon meat onto buns.

German Potato Salad

Everyone, German or not, loves it. A great dish for pot lucks or special occasions.

Prep time: 30 minutes
Cook time: 20 minutes

Ready in:  50 minutes

INGREDIENTS:

3 cups diced peeled potatoes
4 slices bacon
1 small onion, diced
1/4 cup white vinegar

2 tablespoons water

3 tablespoons white sugar
1 teaspoon salt
1/8 teaspoon ground black pepper
1 tablespoon chopped fresh parsley

DIRECTONS:

  1. Place the potatoes into a pot, and fill with enough water to cover. Bring to a boil, and cook for about 10 minutes or until easily peirced with a fork. Drain, and set aside to cool.
  2. Place the bacon in a large deep skillet over medium-high heat.  Fry until browned and crisp, turning as needed.  Remove from the pan and set aside.
  3. Add onion to the bacon grease, and cook over medium heat until browned. Add the vinegar, water, sugar, salt and pepper to the pan.  Bring to a boil, then add the potatoes and parsley.  Crumble in half of the bacon. Heat through, then transfer to a serving dish.  Crumble the remaining bacon over the top, and serve warm.
