Marinated Pork Roast
Enjoy this pork roast sliced with a side of green beans and potatoes.

INGREDIENTS:

1/2 cup soy sauce

1/2 cup Coca Cola

2 cloves garlic, minced

1 Tablespoon dry mustard

1 Teaspoon of ginger
-
1 Teaspoon of thyme, crushed

4 - 5 lb pork loin roast, boned & rolled
- Salt & Pepper
DIRECTIONS:
1.Combine all the ingredients except for the meat, to form a marinade.
2.Place meat into a large "zip-lock" plastic bag which has been set into a deep bowl to steady the meat.
3. Add the marinade and seal the bag. Let stand for 2-3 hours at room temp or overnight in the refrigerator. Occasionally pat the bag to help spread evenly.
4.Remove the meat and roast on a rack, in a shallow roasting pan. The oven should be preheated to 325F. The recipe recommends roasting 2 1/2 - 3 hrs @ 325F, or until a meat thermometer registers 175F. Baste occasionally with the marinade during the last hour of roasting.
Dried Cranberry, Toasted Almond & Sesame Seed Salad

Ingredients:
- 1 tablespoon butter
- 2/3 cup blanched and slivered almonds
- 1/4 cup sesame seeds
- 1 (16 oz) pkg pre-washed baby spinach
- 1 cup dried cranberries
- 1/2 medium red or white onion, thinly sliced
- 3 tablespoons seasoned rice vinegar
- 2 tablespoons granulated sugar
- 1/2 teaspoon kosher salt, or to taste
- 1/2 teaspoon freshly ground black pepper, or to taste
- 1/2 cup vegetable oil
- 1 tablespoon chopped fresh parsley
Directions:
In a small skillet, melt butter over medium heat. Add alomonds and sesame seeds and cook, stirring constantly, until golden brown in color. Remove from heat; set aside and cool.
In a large salad bowl, combine the spinach with the toasted almonds, sesame seeds, cranberries and sliced onion.
In a small mixing bowl, whisk together th rice vinegar, sugar, salt and pepper, slowly add the vegetable oil in a stream while constantly whisking until fully incorporated.
Toss spinach salad with the dressing just before serving.
